Lazy to cook yesterday so just made this simple dish with leftovers....lurve the taste of mushrooms
Ingredients:
250g penne pasta
8 mushrooms, sliced
1/2 roast chicken, shredded
3 tbsp butter
1 tbsp olive oil
parmesan cheese
salt and pepper to taste
- Cook pasta according to packet instructions till al dente, drain and put aside.
- Saute 2 tbsp butter, olive oil and mushrooms until mushrooms juices are released.
- Add roast chicken, pasta and stir evenly.
- Add salt and pepper to taste.
- Remove pasta from heat, stir the last tbsp of butter through the pasta.
- Add parmesan cheese if desired.
