Ingredients:
1 shortcrust pastry sheet
1 cup fresh spinach
1/2 cup mushroom, sliced
3/4 cup herb and garlic feta cheese
1/2 cup grated cheddar cheese
3/4 cup cream
3 eggs
pepper to taste
- Pre-heat conventional oven to 200 degrees Celsius.
- Place shortcrust pastry sheet into quiche dish and cover with baking paper. Add weights or rice on top of the baking paper.
- Bake in oven for 10 mins. Remove the baking paper and weights and bake for another 5 - 10 mins until the crust is golden brown.
- Remove stem from spinach leaves. Blanch in boiling water, then cool in cold water. Drain and squeeze dry. Roughly chop up the leaves.
- Mix the spinach and all other ingredients together.
- Pour the filling into the pre-baked shell and bake for another 25 - 30 mins until golden brown.
