Spinach and Feta Quiche


Ingredients:
1 shortcrust pastry sheet
1 cup fresh spinach
1/2 cup mushroom, sliced
3/4 cup herb and garlic feta cheese
1/2 cup grated cheddar cheese
3/4 cup cream
3 eggs
pepper to taste
  1. Pre-heat conventional oven to 200 degrees Celsius.
  2. Place shortcrust pastry sheet into quiche dish and cover with baking paper. Add weights or rice on top of the baking paper.
  3. Bake in oven for 10 mins. Remove the baking paper and weights and bake for another 5 - 10 mins until the crust is golden brown.
  4. Remove stem from spinach leaves. Blanch in boiling water, then cool in cold water. Drain and squeeze dry. Roughly chop up the leaves.
  5. Mix the spinach and all other ingredients together.
  6. Pour the filling into the pre-baked shell and bake for another 25 - 30 mins until golden brown.
